— category III · the italian hour

The Orangery.

featuring Aperiniets
Born bitter. Born in Italy.

The aperitivo tradition is older than distillation. This category honours that — botanical macerations of bitter orange, gentian, rhubarb and clove, cold-steeped the Italian way, in Italy. No alcohol step to undo.

— THE METHOD

Why we macerate, and why in Italy.

I

The oranges

Bitter orange from Sicily, gentian root, clove, cardamom — seven botanicals and ten ingredients in total, sourced where each grows best.

II

The maceration

Cold-steeped in water for four to six weeks. Slower than distillation. Gentler. The oranges give up their character without scorching.

III

The bottling

Filtered, balanced, bottled in Bergamo. The bitterness, the citrus, the slight sweetness — exactly as the aperitivo demands.
